Golden Age Guts was the worst by far. Some of the earlier chapters looked real shitty. I noticed he started giving Guts a bit of a chin after the 1 year timeskip, and it seems like he had some revelation during the eclipse too because the art for Guts sort of changed during there a bit. After the 2 year skip into the Conviction arc he started looking normal, he sort of looked normal in Black Swordsman but shittily drawn. Hawk of the Millennium has the best art by a country mile though.

The artwork has changed drastically and it's very clear they are cutting corners in some areas. Plus, all the hiatuses. He is obviously sick and unable to continue working like he used to. It seems like the most realistic situation would be that they simply put him in charge of storyboarding / writing and they have younger people doing the artwork which is the physically demanding aspect of a manga.
