Subaru if you pay attention to his eyes on episode 1, got full of life again once he noticed he went to another world, giving the idea that he was rather unhappy on earth, and the maids so far will not give you proper idea of what they're up to, but they are suspicious of Subaru.

As for realistic actions, i'm not sure what you're referring to. Most of then seem fairly resonable for me, coming from a guy who wants to play hero, and thinks this world is probably better than all the shit he had on earth, and Emilia who clearly has some problems due to being an half elf, as you can notice when she gets all sad when Subaru notices it. She just really wants a friend.

Subaru doesn't realize he went back in time even when it should be incredibly obvious, leading to pointless character drama.
Emilia for no explicate reason tells Subaru that her name is Satella, which we later learn is the name of an evil witch that everybody actually fears, leading to a scene of pointless character drama when Subaru refers to her by that name in the marketplace.
He absolutely manhandles the three dudes in the alleyway at one point and then the next time he meets them he just tries to ignore them despite knowing they have weapons, leading to him getting stabbed like a retard.
Subaru doesn't even attempt to tell anyone about his power until after like the 4th or 5th time he dies, and then he can't tell anyone which just feels like an asspull.
The blue haired maid attacking Subaru when he had given her no reason to be suspicious of him other than that line about "smelling like the witch" was pretty stupid. Especially since Beatrice and Roswaal both noticed it as well but were completely unfazed by it.
Subaru acting extremely suspicious for pretty much no reason after the blue haired girl was killed by a curse was stupid and lead to even more pointless character drama.
Subaru learns that the dog in the village is the one cursing people and waits until nighttime to go check it out instead of just dealing with it immediately.

I'll answer each point if you don't mind:
1-In case you've forgotten, each time he dies he seems to smell worse and worse, and so does his supposed to connection to the one giving said smell. He must have thought there was something wrong, since waking up after dying probably feels like a dream.

2- Subaru figures that Emilia used the name Satella because for one, Satella was an half elf, and you can notice she wants to help people, even if it gets in the way of things she'd doing, she didn't want to involve him in her problems, so naming herself after that world equivalent of satan who destroyed half the world, was to scare him off, and make him think she's crazy. That doesn't work because he had no clue, Puck even calls it bad taste.

3- He worked off a surprise attack and got the dude with the knife down fast, which worked, but in the loop he got knifed, he probably got cocky, and wanted to get around then fast, think they wouldn't actually do it. The guy who knifed him did it on impulse too since he got shocked and the others scolded him for it.

4- He probably thinks nobody would believe him, and he would come off as insane. When he finally started to go full despair he wanted to get Emilia to understand what was going on, but the hands stop him. My best guess is that the witch, does not want him telling people about the power, which would make people connect his smell, and powers to Satella, and they would know her seal is not absolute and possibly do something about it.

5- She does have a reason, the smell is the main trigger, but in the first loop, he did not die to her, the curse got him. After he died the smell got worse, and she got wary, him knowing stuff about the mansion that he wasn't supposed to know, and acting all dumb when she asked him about it made her even more suspicious. Rem also has a past that deals with why she hates the smell so much, and has a personal grudge on the witch cult, that will show up on episode 11.

Beatrice did realize his smell, but i don't think it's ever said that Ram or Roswaal know about it. I think Rem is the one who can tell, because she has her oni horn, while Ram doesn't, i think the horns allows then to detect the smell. Beatrice has her reasons to not be bothered by the smell of the witch, but they're not really explored in this season completely.

6- He was completely broken, since he did want to be friends with the people in the mansion, so learning that Rem and Ram both seem to hate his guts broke whatever he had left. He also thought of going back once he saw how everything went to shit but hesitated due to fear, you can notice that since he sleeps near the cliffside, afraid of jumping and wakes up near sundown. He only does so from a burst of courage, and after learning that Rem and Ram did try to ease him when he was having a nightmare, so he figured they weren't heartless. The discovery that everything that happened to him was not just the work of the maids (he could have figured they poisoned him, in the loop that he vomited), he decided to change it.

7-He got there fairly late, and he also had to work on things in the mansion before he went for Beako. When he noticed Roswaal going out he also figured something must have changed since he never did so before.

In the first timeline he dies from the curse in his sleep.
In the second timeline the only somewhat suspicious thing he does is goes straight for the suit he wore in the first timeline which isn't all that suspicious, especially since it was too big for him at first. Then he gets cursed again but wakes up and stumbles through the hallways before being killed by someone with a chain weapon. To me it's pretty obvious that the person was supposed to be Rem but you could argue that it wasn't.
In the third timeline he decides to live as a guest instead and there's never even an opportunity for him to act suspicious. Then he leaves and gets attacked in the woods and killed by who we know for sure is Rem.

I find it hard to discuss Rem period because her everything just -stops- after Arc 3. And Ram isn't even important enough, not to mention her own thing with Roswaal, to have much going on for their backstory. But for me, how their backstory ties into the characters they are now is what I find interesting. That Rem is so flawed and imperfect because she strives to be this perfection still below her own sister is interesting. Unfortunately, since she's in a coma, she gets no development. She's stuck at imperfect waifu mode for god knows how long. Anything I can say about her character is just speculation, which is really frustrating.

It wasn't nearly on the same level though. And since so much time has passed and so many things have happened, for Subaru to sit Rem down and have that sort of talk with her would be great. Leaving her to just find her way back into life by herself is just cruel, especially for someone who was so desperate to have her back. With Subaru and his crew, plus his relationship wit Emilia, there's no way Rem can try and fit herself back into her usual place. She's not only going to have to step her game up, but change who she is and how she'll interact with everyone. Even her own sister.

That's probably the ideal development, so long as "independent" doesn't mean "sent to somewhere far away, never to be seen again". My worst fear is her ending up being made completely irrelevant after spending so much time in the coma.
