It does appear to be genetic, or at least susceptible to outside factors. Stress can cause rapid graying, but it also comes with balding and Kaneki is not seen balding. So something or other triggered Kaneki's change and it wasn't the jokes the centipede told him.
It might be a specific trait of his that allows him to change appearance to some extent, like Uta. Only he's not conscious of it.

Because Kaneki joins Aogiri instead of forming his own group in the anime and so Banjou and Tsukiyama get the shaft (especially Tsukiyama who also gets his character fucked with) in terms of screentime. Their only scene interacting in season 2 of the anime was the rooftop scene where Tsukiyama tries to stop Kaneki except it's completely out of nowhere since unlike in the manga they haven't interacted at all to justify this emotional outburst from Tsukiyama.

And to top it all off they IIRC turned it into a comedy scene too.

Nearly nothing makes sense or is even attempted to be explained, the plot points are entirely nonsensical, expecting logical character motivations is a pipe dream, and the worst part is nothing in the anime was even original in the slightest, except possibly one scene with Tatara and a guy at Cochlea, though that might have been from other material like the 4koma etc.
