Well considering the her relationship with MC and what the "main" story behind the whole thing is. Her drama even in other routes makes sense and isn't really just her being a bitch. In my opinion it's justifiable to some extent as it's inline with the story.
Though I'm not saying I like how she acts but at least it's not just random drama.

Oh yeah, you're right. I forgot about her interactions. She does hold back, but we see them through the skits she and Chisato have with the MC. Those skits are always a blast to watch for.

Let's be real now. having other choices is one thing, but being most suitable is another. Within the show, Chisato was the girl the love story and drama was primarily crafted for. Yuuki had the most special feelings and connection for Chisato than any other girl, and deep down, he realized his love for (as foreshadowed in the flashback) her. Before the breakdown happened, the two of them had something special ( the teasing, playful skits, intimate moments, etc) already, and after they got over the drama, what they had became real, making their relationship come full circle.

The title is "Koi to senkyo to Chocolate" and the subtitle is "The story of a boy yearning for true love and a girl hating chocolate" so unless Satsuki is the girl hating chocolate then she had no chance at all.
This happens with a lot of stuff too, go in shows with a clear main girl then complain how the main girl wins and their side girl had no chance.

Taiga was the obvious winner from the start and they never really delved that deep into developing relationships with other possible "heroines", it's a pretty big difference in comparison to what we are discussing.
If you want to bring up a better comparison you should have brought up the anime version of Oreimo, which is quite different anyway just due to source mediums.

Its a normal thing in shows, do all the arcs and then leave true/main girl for last.

Someone not main girl "winning" only happens in VNs where there's no clear main girl/true end but it usually is harem/open end for those.
