NUke 11 is loaded with spystuff, which opens lots of connections. Compared to that, Nuke 10 is harmless.
You need a program to watch open ports like TCPview. Then a firewall. Its not enough to block the *.exe from phoning home, you have to find out which ports are getting used by one of the processes. Then close/block them.
Shouldn't be more than a handful for older versions of Nuke, 11 is a different animal and i haven't touched it yet.
There is however always the airgapped method. Just run it on an offline computer and you'll be fine.
Option 3 is to use the legal Non Commercial Version if you use it non commercially.
Use Natron or Fusion for OFX plugins which won't work with the NC version.

This probably mexican has a pretty good like/dislike ratio on this film and there are no comments that the foundry broke into someones house and beat them to death for pirating it.
Maybe them being on your tail is just some myth someone created to scare the pirates away

There are threads on CGpersia, CGtalk and Polycount about it and of course they do this as a kind of scare tactic, doesn't mean people won't get ugly papers from lawyers per mail, if they are stupid, leave trails and have a business (meaning money).
Just ask yourself the question, do you REALLY need the full version of Nuke which is coming with all this potential hassle, or is the NC version enough? If you need a node based compositor for commercial work but have no money, use fucking Fusion.
