A huge part of King's Field were the controls which, if presented into a modern game, would be defined as "shit" due to how slow and clunky they are, especially considering the caliber of FPS on the current consoles

Would you make it a lot faster, and maybe with larger areas to compensate for the now not-that-much-limited maneuverability?
Or would you still keep it the same and just improve the graphics along with new cool level design, more weapons/magic etc.
But wouldn't keeping it as it is then make it closer to the Legend of Grimrock style games than anything else?

If you can't interrupt well, dodge every initial attack he has towards your 2 o' clock, then dodge any follow-up attack to your 3 o' clock. You'll be directly behind him and get get several free hits before he teleports away.

Rinse and repeat until phase 2.

In phase 2 you have a few options, and one attack to worry about more than any others.

If you're an arc build, you can literally stunlock him to death with BSE. Just hammer on the square button and he will never be able to move. 20-25 bullets is enough to kill at 50 Arc.

You can keep dodging all of his regular attacks as you have been except one: the charging flaming lance. The most reliable way I've found to defeat it is to wait until the last possible frame before and hits you and dodge almost straight at him, between your 10 and 11 o-clock.

An alternative strategy for phase one, if you're an arc build and have Augur, is:

On his initial attack, dodge directly towards him, on his follow-up, dodge directly away. This will almost certainly bait him to do the big chop, whereupon you can dodge just off to the side, at about 1 o' clock, so your dash carries you behind him. The recovery on the overhead attack is long enough to give you a free Augur backstab, letting you pile on more damage than otherwise.
