I'm on a relatively new character and I'm being killed in one hit by random fucking chaurus and falmer that I can barely chunk away at with weapons that are supposed to be higher than my level (12).

UNP, UNPB, UNPCM, etc. are body meshes that you can use right away. UUNP bodyslide is an application to build meshes exactly how you want them to look. Just use whatever looks like how you want. When I use BOSS and rebuild the patch, it will turn off the grass overhaul which results in this sparse looking ground etc. I always launch Oblivion from obse_loader.exe too.
