I think it might be a case of translation convention personally.
Bloodborne probably has it's own language and set of turns of phrase, spartan lifestyle became a turn of phrase in English and more people would get it than if he said "have my church hunters lived a life of honourable austerity" because while we know what it means, it's not exactly a common word and translators might not have even thought of it.
I try not to analyse the language of in game universes so I tend to just assume translation convention about stuff like this, makes more sense that way.
