Since they can't interrupt you, players are forced to wait for you to make a move and punish your mistakes.
Winning with ultras means playing mind games with the people trying to play mind games with you. It's all about tricking people into attacking when you aren't actually vulnerable and baiting them into situations that work in your favour.

PvP will ultras is objectively more involved than other weapons/playstyles because your attacks are slow and easy to dodge while also being easy to punish, and your opponent has no incentive to take risks against you.

If they are doing all 3 of the things you just said, you really don't have many options. Best you can do is try to make hard reads on where they are going to roll or when they are going to attack, and try to swing one more time than they expect you to, to catch them when they think you're done. Make sure the weapon you're using has a decent heavy attack/rolling heavy so you can throw that in the mix too.

If they play scared enough you're shit out of luck, though

Reds get priority because of the inherent threat. Most of the time I get summoned its just me and the host. They seem happy enough to let me tackle the red, but there are always hosts who are more aggressive than I am so its just kind of a play it by ear, at your discretion deal

Ignore everything /v/ has told you about the game, it's all memes regurgitated by people that don't play the games.

Poise works and armour helps, but it's situational. Worry less about minmaxing on your first playthrough. Being naked oenalizes your defenses sharply, so always wear something.

Big, slow weapons are perfectly fine but can be harder to use than small, fast weapons. The first 5 hours of the game will provide an abundance of upgrade material and ramp up difficulty very slowly, so it's an ideal time to try a variety of weapons and movesets and stick with whatever works for you.

Dex is fine

If you want to turtle, find yourself a decent shield and be sure to have lots of endurance. Shields are very, very good.

I tend to walk in a direction while looking into another one which causes the camera to jitter since it always turns towards the direction you are walking.

I would rather just rework the current rings so that ringswapping becomes less of a thing. All rings should almost always have an active effect. SPR does nothing while you're at full HP, while lloyd's rings do nothing while you aren't at full HP. May as well merge them so that people who flip back and fourth between them aren't given an advantage, it would make sense with the shield ring in particular since the regen would give you a means of potentially re-activating the absorption buff, while the absorption buff would lower the distance from max health you are after being struck.

Because both pyromancy and hexes need int + faith they are pretty interchangeable based on what you're feeling. If you can't choose then just wear the pyro glove but use the dark pyromancies.
