Yes to all of the above. Old beast tribes are very tedious (mainly the quests that require to wait around for a specific fate to spawn) but it's just easy, menial labor. Use the Ixal quests to level crafting jobs to 50, then use the Moogle quests to level them to 60. Vanu and Gnath quests are much less time-consuming than the old tribes.

Hildebrand can be done in a day, but take the time to actually read everything and enjoy it.

Ixal and Moogle quests use crafting instead of combat. They also give disproportionately massive amounts of XP.

Yup, that's the path to get all of the most useful cross-class skills. The other level 50 skills are largely irrelevant for leveling sub-50 classes. Also, leveling to 15 can be done very quickly just by filling out your recipe log using ingredients from NPC vendors.

Side note on Ixal daily quests: different tiers of quests give you different handicaps. Some nerf your CP total, some block you from using cross-class skills. Most of the quests are still fairly easy, but it is something to be mindful of. Moogle quests are far, far easier because they don't do that.

You can consistently HQ shit with Tricks of the Trade, Hasty Touch, Steady Hand II and Rumination to finish off the craft.

I've been HQing my every GC turn-in starting at lvl15.

Keeping stacks of most common lumber, cloth, leather and metal in inventory makes shit fast and easy.

Samurai and Red Mage will be competing for true Flavor of the Month status at launch. Until some faggoty streamer decides for everyone which is "better" and what the new metagame should be, at which point the wave function will collapse, and all the shitters will migrate to one class. Just like it is everyone's responsibility to DPS as hard as possible, aggro is also everyone's responsibility. Actively trying to rip hate off the tank serves no practical purpose, unless you need time to rub one out while waiting for a rez. Likewise, the tank should be cognizant of the threat meter, but if you just got a massive crit/proc/whatever chain and are now a pixel away from pulling hate, maybe that Fire IV or Death Flare can wait a second or two so you don't get insta-gibbed or get the whole raid cleaved apart. Aggro management tools like Quelling Strikes and Elusive Jump exist for a reason. Remember, a good tank is also maximizing his DPS, and unless he's a warrior, that means not using his enmity combo. So use the tools provided to you, and let him react to this sudden shift in enmity levels rather than killing yourself just to make a point.

Okay so I feel the need to level a healer class so I can have one if I ever need one. What are the major differences/gimmicks between the three? I get that scholars get pets and astrologians get a few extra buffs but I don't know much beyond that.
What do white mages do distinctly? It seems like a lot of the spells you would go to them for can be cross classed so I'm not really sure what they can do best. In particular astrologian just seems (at a glance) like white mage+.

WHM is god-awfully boring IMO I couldn't stomach it past lvl 40 or so. Scholar is nice for laid-back playing because your summon does a good chunk of the healing for you. AST has some really nice single or multi-target buffs and can shield for a % of what they healed for.

For me anyway, AST>SCH>WHM in order of fun.

I didn't really do too much with everyone there since my schedule was wonky, and then I'd usually just sit around AFK for quite a bit as well. I'm on Excalibur at the moment, but I don't know about staying since my friend has pretty much quit MMOs in general. So not too sure where to head from here, but I want to get things in order before the expansion and such.

MNK is honestly dirt fucking easy. It has the easiest rotation of all the melee DPS IMO. The only reason people think it's difficult is the constant positionals, but that becomes muscle memory once you've played it enough. The only other thing is MUH STACKS but almost every other DPS job has those to worry about, it's just a matter of knowing the fights.

what I'm doing is leveling drg, ast, and a tank to 70, then doing whatever else unless there's maybe a specifically really op job that I might switch to, you should just have a couple of things ready to level perhaps based of a role you prefer

if you just want me to guess what the safest classes are going to be, probably DRK, AST, DRG, and NIN

there's little hints of them being nerfed, though guess the globalization of utility may cause some concern for NINs, but I still think those 4 will be fine

The odds aren't 50/50, since it's possible that the streamer in question will declare both classes sub-optimal and tell everyone to stick with the old jobs. But yeah, that's the idea. The vast majority of people just play the game however Reddit tells them to, and Reddit just parrots what the e-famous streamers say. Very few people have any desire to think for themselves, hence why everyone just follows the guides for everything, right down to what skill rotations to use. Nevermind that any given class's optimal rotation can be solved in under an hour with a spreadsheet and some 8th grade algebra. And nevermind that any given fight mechanic essentially boils down to a choice of getting close to the boss, getting far away from the boss, standing in a predetermined spot relative to the boss, standing in a predetermined spot of absolute designation, or standing in a predetermined spot relative to another player. Or possibly a combination of those choices performed simultaneously or sequentially. There is not a single element of the PVE in this game that is legitimately complex. The mechanics are deceptively simple, but they tend to punish you with instant death, which can lead to irreversible wipes because of other mechanics going completely haywire when the prescribed eight warm bodies in a class configuration of 2/2/4 are not present when it snapshots for activation and throughout its duration. Zurvan is a good example of this, where anyone being dead when tethers go out is highly problematic.

Anyway, the point is that streamers and their fans ruin games. Not just this one. Path of Exile is a very good example of this concept.

Also, don't abandon a job just because a streamer told you. Classes will most likely be heavily rebalanced in the early patches, and the meta will shift back and forth as a result. The only guaranteed job security is Machinist and Bard, unless another job gets an equivalent to mana song.
