Give me a fun build to play at SL50 with +6 weapons. Starting class knight or pyromancer.

Only requirement is it needs some strategy for dealing with ganks, but this will be mainly aldrich invasions to be fair. Last build I played was mostly 1 handed heavy Great Mace with BK shield, switching to 2 handed if I was being chased by multiple people and hardswapping to heavy 4 pronged plow if a host started pulling a usain bolt and running away or just being a passive asshole forever in general (haha you're using an ultra weapon i'm literally just gonna backpeddle and dodge every swing until you run out of stamina, only then will I attack).

The best weapon sorcery catalyst in the game. Optimal damage at 60 INT alone, low requirements to wield, one of the highest spell adjusts of weapon catalysts and since you only need to 2H it you can always offhand a Scholar's Candlestick freely. The low weight also means even a base VIT mage can get over 20 poise easily with it to poise through everything fast while magic and spacing can deal with everything slower. And if that wasn't enough R1s of pick combo into Soul Greatsword and Old Moonlight (the latter doing more damage) and also a jump attack but why the fuck would you use that over the other options. The WA chant also buffs the magic damage of the Pick as a weapon while it's active but it's so short don't even bother outside the start of a fight.

Just beat Pontiff, should I be settled into a playstyle or build by now? No weapon has really struck me as particularly fun to use (well maybe reinforced club but the R1 felt too much like a LS) so I haven't really settled on anything yet. With power stance removed I don't think I can have the fun with Caestus or whips like I did in DS2.

At 18 STR/DEX I still don't have the stats to use everything so maybe there's something more fun to use with higher stats?

What are some weapons you guys like? What's good for PvP? Hell, what is even an effective strategy/build for PvP? What tools are there to punish rolls or Estus chugging? In DS2 I could punish estus with a sunlight spear, is it as strong in 3? I'd like to do a hybrid faith build in 3 but once again I have no clue as to what's decent or not, I'm just using a raw dark sword with a mishmash of stats right now
