So I have a +atk Kagero and a neutral Jaffar, I like Jaffar but he's totally outshone by titties.

I was gonna keep him around to pass Life and Death to someone else some day but how would a Kagero with Deathly Dagger work? Her attack would hit 47 with it, then maybe add Fury for an even 50. She'd be a lot more useful against non-infantry, but is she just made for her poison daggers?

Use Effie and other high BST units.

I use Effie, Ephraim, Roy with Fury and Ninian.

Ephraim has Smite and Deathblow (From another Effie) and Roy has Shove, so the two use their mobility and buffs to get in the right position to launch the Effiecannon across the map so she can assassinate a mage.

Since she basically won't die to anything that's not a mage, I just assassinate the mages ASAP.

She even survives a single round if Hector initiates, and can live against some of the other reds dogpiling her after.

As long as I don't misplay or get fucked by dumb map design, Effie carries me to victory after being thrown by the Ephraimcannon and the Roypusher. Roy kills Hector, and Ephraim basically kills every red, lance user and magical unit he can initiate off of, which is quite easy with a dancer.

Ninian can be subbed for a maxed out Olivia or Azura, if you wish, and Ephraim could be any blue damage dealing nuker.

What skill should I give my +atk -def Subaki?

Was thinking about Defiant Def to patch up his Def along with Bonfire to take advantage of his def and Quick Riposte and adding on almost 20 damage under defiant def. Threaten Attack would probably be the best C skill for his natural tankiness.

I prefer mine since its basically zero risk for big reward. Unless of course they have a freaking Brave Ursula/Cecilia.
