Noct usually ate the death with his fish and Golem or Embolden was up going into thresholds so stabilizing wasn't that bad. Remember that you have to hit him with most elements during the stabilization turn too or get fucked the next turn.
If you wanna do this with a 5 man party you really really need a DC healer. It's much more manageable with 6 members because you can bring 2 healers.

Perhaps a DW Rain(Air Knife+Rune Blade)/Cecil/Ling/Refia with the 5th slot being either Lightning or Dark Fina(dropping the Earrings for a pair of Dominate Rings) will suffice with a Noctis friend. I wish that Ramza's enhancements would get here already to make the fight easier.

It took me three tries but Gilgamesh down and out for the count. Got a whale Noctis friend with Deathbringer to do stupid amounts of damage. Slow and steady won this race with DW Rain/Dark Fina for the elements and Cecil/Refia/Ling to keep me healthy, buffed, and refreshed with said Noctis friend also helping with Cover.

Here's Greg about to lose his Genji Blade, the 10% TM Moogle, and his Bushido-Freedom. He can keep the ATK+30% since I will want to swap out Cecil for WoL, Refia for Tilith, Ling for Ramza and likely give the Safety Bit to Tilith.

You want to absolutely cover Light/Fire/Wind after he goes below 80% with Water/Earth being optional but nice to cover. Defend when you're about to trigger the 80/50/30% threshold marks. When he goes below 50%, add in Thunder to must cover as well. It's alright to wait to dispel him since covering the elements and keeping your team healthy and alive is a priority. Buffs and breaking his MAG is secondary. Noctis is nice to have since he can use Fish to trigger your tank of choice(at the moment either Cecil or WKN) to cover him.

Noctis/Cecil/Refia are pretty much necessary in this fight. The other three slots should go to elemental coverage and backup healers/de/buffers.

Note the team I used at least covered some elements twice. Fire by Rain/Noctis, Earth by Rain/Dark Fina, Water by just Dark Fina, Thunder by Dark Fina/Noctis, Wind by Rain/Dark Fina/Ling(Survivor Knife), and Light with Rain/Dark Fina(Ramuh). I only had to revive members a max of three times and got lucky that it was Ling and Cecil who had to take the fall. Also make sure that your team has at least 5K HP, 6K on the tank to be able to take his hits better. He can do up to 1.2 K AoE damage with his X-Slash alone and you don't want to see that multiple times.

You only have to worry about Light for the first phase of the battle and you can ignore that if you want to. After he dips below 80%(when his HP dips below the line diving your party) however after MORPHING TIME, you need to start covering as many of the elements as you can with Fire/Wind/Light being a priority and Water/Earth being secondary(and he uses break the third time he uses Masamune which is nice since it gives your party breathing room for that turn). After the second MORPHING TIME however at 50%(HP bar dips below the end of your health bar) you need to add in Thunder to that must cover list and you have to use either magic or hybrid damage to seal that element. He morphs one more time at the line dividing the character's current health to max health.

I ran those numbers by the unit calculator. 850 att is 240-250k average unit damage, whereas 1000 att is Average: 360-370k average unit damage. I wouldnt one shot, but cheeze is possible if I get him to 50% before the big swing. hell, i might even be able to limit kill him too
