Assuming it plays in the general likeness of Extra, if not exactly:

Saber: John Hunyadi, White Knight of Wallachia. Simplest character to learn with a high focus on defense, survivability, and dealing DoTs to the enemy. A genderbend, naturally. Has the weakest Noble Phantasm in that it's a self-focused one that gives a huge strength and defense-up, while sealing certain types of enemy skills, but it's also the easiest to activate.

Rider: Moses. The muscle wizard in a new class he's never been summoned in and isn't very familiar with. Less wizard, a lot more muscle. A high-risk high-reward servant that relies on self-buffs and blessings to survive things by the grit of his teeth, since his body is rather frail, then counter-attacking with damage that pierces through defense. His Noble Phantasm is simple in that there's only a time limit involved before you can activate it, but it can also only be used when under 1/4 health.

Assassin: Nobunaga Oda. The most bizarre and unwieldy of the servants, definitely the hard mode in that she's not suited to direct combat. Instead she uses lots of deception, debuffs, poisons, and sneak attacks to gain a leg up on her enemies. Has the most powerful Noble Phantasm, but the hardest to activate, requiring a series of debuffs to qualify the enemy as a faith she can tear down.

SECRET CHARACTER: Can only be used on NG+. Avenger Edmond Dantes. High speed, high damage, DoTs, and a defense focused around never getting hit at all. Overpowered compared to the other three, but also the toughest to unlock all the conversations and get the secret ending of.

Nobunaga has the same stats as Gilgamesh, and is very suited for up close battle. She was called the strongest servant in Koha since her legend is one of the greatest in Japan.

Abilities are slightly worse against heroes with very little mystery, but she's strong.

The class change, in my idea, would change her fighting style. She'd be less the warlord on the frontlines and more the cunning, ruthless strategist from behind the scenes. The obvious answers would be Arturia, Cu, and Medea.

Not only are they well known but they would fit any kind of gameplay.
Arturia is the easy character, heavily armored and can take a lot of hits while doing truckloads of damage, don't have to be too gud at the game.
Cu is the normal. Not squishy but not a beefy tank like Arturia, more based around speed and dodge, more strategy is required but he's a strong character overall.
Medea is the glass cannon. Squishy as fuck with extremely low defense options but can hit like a freight train if you can keep enemies at range, requiring a lot of planning and strategy and easily the weakest if you don't do it gud.

Then you add in secret character Gilgamesh who's unlocked by doing a permadeath ironman run of Medea and he's the cheat character.

It's hard to choose characters if you don't even know what genre it is.

Those three would fit just about any kind of game while having distinct playstyles. And Gilgamesh can just be forced in as he is and not balanced at all because he's the cheat character you unlock for being insane.

They would be the best servants to make the gameplay the most enjoyable no matter what it is, and that's ultimately the goal for a game.

Siegfried, Instead of just dying off in the first few volumes we explore why he became a seigi no mikata and why the tragedy of Nibelung turned him into such a self-depricative person. Kriemhild is a boss character down the line that you can recruit that helps shed light on the dynamic and the emotions of the people involved in the tragedies. as the route goes on the game becomes more focused on Kreimhild, much like the original myth.

Morgan Fae. Story focused on her inferiority complex that she hides behind a "I'm actually evil" act. explores why she why she wanted to rule and what happened to turn her into such an evil bitch. Mo-san is a recruitable boss that tells you a bit more about what Morgan was like while raising her and how she treated her other children outside of just wanting to take over Arthur's throne.

Archer Odysseus. OC Spirit. story involves finishing the first few fights but then the route goes off-track heavily from the standards of other routes, spends more time exploring the setting and revealing certain truths about the game rather than developing Odysseus himself.
Characterization would be close to Hector where he's a Clever bastard that's pretty chill.

There's no such thing as a good team you fucking shitter. You keep changing party composition depending on your enemy lineup, which is why you need a high-level Servant from each class to counter whatever you are fighting.

Tamama Cat is a good Berserker if you wish to wipe a any wave of mob, but you need to max her Montrous Strength. This is also my only Berserker that always goes back to full HP after her NP instead of just dying afterwards.

Artotia Lily can also wipe waves with her NP if you max Mana Burst, but her normal attack is weak and she's not effective against any class.

Level up Euryale and Robin to one-turn kill boss fights with 300k HP or lower.

Otherwise, just keep bringing El-Melloi support and he'd usually save whatever party you have.
