A lot of what I'm learning by playing FF7 in Japanese is that translation mistakes wind up not mattering for the plot, but mattering a lot for how you see the characters.
I used to like Tifa the best and never cared much for Aeris, but playing in Japanese Tifa kind of grates on me, whereas Aeris is a lot of fun. And I don't remember Red XIII being as much an adorable tryhard in English. (screenshot is of him accidentally starting a sentence in a childish manner, and then pausing to correct himself)

I'm sure not having played the English version in like 8 years has something to do with that though.

As I said in my posts before that, what changes is mostly how you see the characters. Your understanding of the plot doesn't change at all, nor does the fact that its plot is kind of simple and not anything special. It's kind of hard to put into words how exactly your view of the characters changes. LoD's localization is just robotic and literal, and takes a lot of the flavor out of the dialogue. I just found myself caring for the characters more in general, especially Rose.
The biggest thing about the Japanese version in comparison to the localized version though is the changes in difficulty. Enemies have about 25% more HP and deal about 20% more physical damage. Magical items do between 200 and 400% less damage as well. Off the top of my head, I tested both versions with an identical Meru against the same enemies using the Psych Bomb X unboosted - US version did 900 something, and JP version did around 250. It actually makes the game properly challenging.
