How would you feel about MGSV if it was structured like this?
I feel like my biggest problems with the game are its pacing (why the fuck is the first 70% of the game "chapter 1"?), and cut content. If the game was like this it'd be a lot better for me.

I disagree. And if you look at the list, toward the end, the unfinished content is in there.
I think the first 31 missions of the game feel very finished, and then things go downhill. The way the game is paced, it makes you think that after you've beaten mission 31, there's a whole tonne left to look forward to, thus why chapter 2 was so disappointing. If the game has a regular chapter structure, where each chapter is 8-12 missions long, then people wouldn't be at chapter 4 expecting a whole tonne more content, they'd be thinking they're nearing the end.

By the end of this game you even know when exactly zero fell into a coma, what liquid name is, why was ocelot called shalashaska and how the cobras got their powers. From what I got from MGSV, was that Big Boss was never a demon or a 'Bad guy', he was only portrayed as one. Like how The Boss is now a war criminal.
Sure he did shitty things with Child Solders, but in MG2 everyone you talk to loves him, even in MGS, everyone talks about how Big Boss saved them and what a great man he was.
Also we were led to believe that him and Zero hated each other and were at war for year, but it turned out they were BFF's.

We've sort of known why BB went to being a shithead in the Solid series though. Zanzibarland was intending to become the new world order, and in PW BB demonstrated pretty much the same beliefs, just not on as big a scale. I just had a go with a really fucking sneaky fob infiltrator. He used the box to hide himself from the intel team. I couldn't seem to get him on sonar, either, possibly because he was using a stealth suit. We went for 5 minutes like this and he got really close to the core (starting from the 3rd platform) before he blew it with an ineffective stun arm. That and the fact that he gave me time to mine the core platform with enough explosives to send Rambo into orbit. I've never been able to use every single mine, sleep mine, and C4 like that before.

The online focus is part of what killed metal gear in the first place anyway, mgs4's gameplay was basically just a short campaign thrown together to bridge the cutscenes together while mgo2 was the real game, and mgsv had real-time phonegame management shit bleeding into single player just because they planned on pushing microtransactions into the multiplayer, which also has a mode which is tied to single player when it had no business being there, forcing you to jump through hoops just to play the game offline.

You can find it on jewtube as "the phantom episode", it was included as an extra in the collector's disk. It's best watched after mission 45 and before 46.

The prequels expect you to know stuff from the sequels, playing them chronologically you'd just be confused.
(Peace Walker assumes you know the identity of the patriots which is revealed in mgs4, mgs3 expects you to know who big boss is and what la li lu le lo means, it also has a lot of in-jokes to previous titles. MGSV has a timeline at the end spoiling all the other games in the series.)
The only extra content that is canon is the japanese radio drama with kaz and big boss, it was also included with GZ in japanese but they removed it from the western version because they didn't want to pay keifer even more.
Rising is non-canon according to kojima but it doesen't contradict anything, so you can see it as canon if you want.
Portable ops is semi-canon in that the overall storyline happened but not in the way that it's shown (the appearence of null, sokolov and metal gear contradict the established canon. MGSV and PW both contradict the ending of PO as well.)
NES Metal Gear, snake's revenge, ghost babel and acid 1&2 are non canon.

EVA sends you tapes referencing how their group is investing the legacy.
The final phone call is about miller working with the patriots behind the scenes and the AIs being ancestors to the patriot AIs you see in mgs2.
The game doesen't explain it because it expects you to know.
Not to mention all the timelines in mgs3, pw and tpp mention future events in the series, spoiling them for you if you haven't seen them already.
The gameplay changes are also jarring if you play them in chronological order, there is really no reason outside of autism to do so.

I think it's pretty funny how the early reviewers praised mgsv for how unintrusive the microtransactions were, and then konami fucked everyone in the ass by implementing more and more online content over time and making build times so riddicolous that you either pay or wait for weeks. gameplay wise mgs4 is much worse as a whole, they only let you play the game for two levels before taking control away from you and forcing you to play scripted sequences bridging cutscenes for the rest of the game.
MGSV is actually quite enjoyable if you opt out of the shitty online completely. Though it is hurt a lot by the fact that they cut the finale entirely. I don't bitch about how little story it has since that was the intention from the beginning, the story was pretty much wrapped up with mgs4, this game is only here to explain some stuff like how miller ended up being snake's teacher, how big boss died twice, why the cobras had powers etc.
I wouldn't say it's the worst but it's definetly nowhere near the best ones, since for how good the gameplay is it does get pretty repetitive and lacks good boss fights.
