I am pretty tempted to say Guan Ping for all of those, certainly character and musou.
Sun Jian gets some pretty good death scenes.
Alternatives for weapon are either Zhang Liao, either his halberd, or his twin axes, o Yueying's dagger-ax.

Also where's the favourite BGM, and favourite character theme for Battle of Fan Castle, and Teary Edge respectively?

Gan Ning has a fun moveset, I normally pick him when he's an option

I haven't played SW4 or SW4-II yet, but I personally felt the opposite as you when I played the SW Chronicles games. SWC puts a lot of effort into getting to know each individual character.

I felt that DW thrived in telling an over-arching story but had very weak characters and SWC thrived in getting me attached to the characters but had an unfocused narrative.

Just ordered DW 8 extreme on PS4, last one I played was 2 ages ago.

Wanted to have a chill game with couch co-op and I remember this series being simple enough for anyone to have fun in.

That's up to you. Some people say start off with DW8, but you got other games to look into as well(Samurai Warriors, etc). Heads up, you don't have a run option in DW, you gotta get some Pegasus boots or ride a horse to get any speed going on.
