I really don't think there's anything in Undertale that would warrant a 3D version. Turning it into a platformer would be my only idea, but it doesn't get with the game's structure. Then again, a Devil May Cry system with Flirt and Mercy styles would at least warrant a sensible chuckle.

Lisa the Painful RPG was enjoyable for its story, the battle system was already simple and you're by yourself in the Rando fight so it's just a game of bash 'n heal.
Shit like XDeath and Kefka are also great boss battles story-wise but mechanically they don't try anything special.
Sans is great because it never gives you any indication of how close you are to beating him, because his attack patterns are difficult to dodge and your health system is different compared to any other battle.

This makes me wonder if final boss fights have just gotten shitty in modern games. It makes sense if you only play WRPGs especially since those newer games are like you VS bullet sponge and they rarely last longer than 5 minutes.
But, for JRPGs, Undertale's final boss was pretty standard fare. About as hype as Kefka in FF6, Zeromus in FF4, Gigyas in Earthbound. And these are all examples of final bosses with multiple forms that incorporate "the power of friendship" in some way.
It was an above-average final boss for sure. The way Toby did the visuals and music was great, especially how once the music got 30 seconds in and became hype, the fight's visuals got all rainbowy. FF6 did a similar thing where the music was designed to match which stage of the fight you were in and it would shift according to your progress.
Greatest RPG boss of all time? I wouldn't go that far just because the fight itself isn't really as difficult and multilayered as some other ones. But I can see how people would genuinely hold that opinion even being familiar with the examples I gave.

Not because of the game itself, but because it's basically a mix of Mother and Mario RPG writing yet neither of these series get the same fanfare for the things Undertale also does (because Mother is old and niche and Mario RPGs are ignored for having Mario in the title).
What the fuck? Mario RPGs are some of the most popular, best selling RPGs around and often end up in "top X of all time" lists. They're literally all million-sellers.

I like Undertale and Paper Mario 64 is my favorite game of all time, and I can tell you this: No way in hell is Mario RPG writing ignored. Not only, as I said, the games are massively popular, but the quality of the writing and humor in these games (except Sticker Star) is praised by the overwhelming majority of reviewers.

the game remembers every choice and character you kill and when you reset the character will tell you on that every time you reset
You know, "good" boss fights aren't really all that much about mechanics. More important are the lead up, the antagonist monologue, the boss theme, and engaging the player's desire to beat the boss. Adding an 11th hour superpower or calling in past allies in the final stages is another plus, either satisfying the power fantasy or rewarding the player's investment.
Recent western games really fail in this regard. The only "western" bossfight I liked recently was Witcher 3's DLC boss.
