Well, in the Simpsons video game, the Christian God is literally the final boss in every version. You don't so much "defeat" him as you break his video game so that he will leave you alone.
Easy. Nothing in the OP states that God needs to operate in a particular way. And in the Castlevania reboot, he's pretty much dead already.

That being said the Christian God is basically "That kid", you all know the one who would always have a counter for every thing you said against him. Always engaging in the constant game of 1up against the world without taking into account that maybe the world just doesn't want to play with him anymore because hes a killjoy and not fun at all.

We don't know enough about this god to really determine his power. Clearly, it's limited otherwise if he did love us all we would have the perfect existance.
So then, any character that has achieved absolute power, Necron from FFIX has the ability to reduce everything to nothing, so I'd say that guy.
If he is all powerful then why is there even a war with the angels and fallen angels/devils in the first place?

That's the Old Testament god. The New Testament god changed his sinful ways and became good and benevolent. He also stopped doing miracles and pretty much left us to the care of the weakest, most boring saints imaginable.

Maybe not defeat, but a stalemate is probably possible. Omnipotent beings can't be "defeated" anyways, a stalemate is the most you can hope for.
No, the best way to explain Asura is he's the stone god couldn't lift.
In Asura's Wrath, demigods fuel their god powers through Mantra, which is obtained through emotion. Asura got his through wrath, the more wrath the more power.
All mantra came from Chakravartan, the creator. Chakravartan engineered a situation that would cause one of the demigods under him to ascend into such a powerful being he could leave the world to them as a successor. What he didn't account for is that Asura had a near endless amount of wrath for the whole scheme to the point that he rejected the offer.
Basically Asura kept drawing more and more power from god in his wrath for god that god couldn't keep up.
It was kind of like a suicide, since Demigods are merely an extension of Chakravartans will.

The defeat your god you'd need immeasurable insolence and fury. The Christian god is rudely your god by his definition according to Christians.
Maybe there's a character that gives so little fucks that he'd win defeat god by not caring and therefore being too cool for the universe which would concede with God *in it.

Of course in both, written by the fancy of us mortals, in these stories a little guy who should be mortal, but weaves into the fabric and becomes the most interesting story, defeats the big bad time traveler.
Nothing can time travel dude. But video games are in a made up universe where it's possible. Besides I'm not sure that omniscience spans outside of your own universe either so god wouldn't see it coming.

An omnipotent being damn well could exist, it'd just be beyond the realm of our comprehension. It probably wouldn't be the Christian God, but it could very well exist.
If the abrahamic god truly is omnipotent like scripture claims, then he is utterly beyond anything that isn't also omnipotent.
An omnipotent being could change the concepts of things such as win and loss on the fly, ignore any paradoxes caused by its actions (because paradoxes are also a concept the being could control) and generally do anything and everything.
Omnipotency is the peak of power. There's nothing beyond that point.
