I forgot to mention it but you should definitely get MGE OP. With it you can play the game in 1080p which isn't normally available and it also has some other handy features on it.
I'd recommend only 1 mod: faster run speed.
Use it until you're done experimenting & getting the hang of things at least, it'll save you a lot of frustration & anguish, smoothing out the learning curve.

You can download the morrowind overhaul and use it to get the graphic mods. If I remember correctly, you can disable game enhancing mods and stick to ui and graphics mods.
