Before WotLK Horde used to have better racials for everything. After WotLK Humans had the best pvp racial, but pve racials were still better for the horde. So if somebody didn't want to play Human he probably played Horde. At the same time they've simply got used to it.

Basically escapism, being that dark brooding badass king they can't successfully be in real life. It's arguable that the evil side of the spectrum is inherently appealing to people though.
