That seemed strange. So I had to confirm it for myself. I took a screen cap of the game. The Gerudo guards Indeed have a sizable schnoz. It's just less noticeable when you look at them face-to-face. I noticed this from just the other day when I was playing the Spirit Temple, and checking out Nabooru. When face-to-face, you can barely tell the nose is there. But from any other angle, it becomes apparent.

I have a humanized "monster" I'd like to see. Mendel, from Galapagos. It's a four-legged artificial creature and the protagonist of the game. Mendel is driven by a learning AI. The player can manipulate the environment and click on Mendel to trigger reactions, but can't control him directly. Mendel will learn what the player "expects" from him to pass a level, but can also become frustrated and neurotic when the commands are confusing, or he can't figure things out. It's one of the few games where AI had such a central role.
Saying all this because it would be cool if it would reflect in the "character" of the humanized version.

The cover art shows Mendel as good as he's gonna look, but maybe it's also helpful to see movement and get a bit more context about the world he's in. Have some gameplay

Practice drawing from references or life from those angles. You can try applying the rules of perspective, but it will only look as good as your knowledge of human body is and alot of the times as the angles change, surfaces make up less predictable looking shapes and curves that human subconscious can pick up and make the picture look odd if youre not good enough.

For me there are two kind of figure perspective challenges. Or atleast thats how i separate them.

Just figures in slight perspectives (eye level low or higher than the regular eye level and the likes) and Extreme angles and perspectives (the kind that have foreshortening, where body parts extremely overlap other body parts).

The only thing i can really say is just practice, use a mirror or a camera, check yourself ( or others ) out as sometimes you wont find the references or whatever that will make you 'get' it. Especially with foreshortening as the 2d images arent the best to understand the dimention thats going twords you.
