So I wanna give pic related another try.
Played it directly after release and did every single side mission and question mark on the map, till I burned out at chapter 2 and never picked it up again.
Just got the GOTY edition and wanna start over fresh.
Gotta say I'm not a huge fan of open world filler content and endless collecting.
So, any advice on how to tackle this game for me? I really wanna play through it till the end and I know that the game is known for its good side missions, so how do I approach this monster?
Main missions only first, side missions after that? I really have no clue whats worth it and what not... HALP

Don't bother with most question marks. The loot you get form them is rubbish. The only interesting ones are places of power, and I'm sure you can find maps of those somewhere on the internet.
Stick to the main quest and the side quests you get from characters. Most Witcher contracts aren't all that great.
And you don't need to worry about XP. You get enough experience doing the main missions to comfortably complete the game.

It's a bit too late, but in general: Open your map, open your map icon filter, find the "Place of Interest" icon, set "filter out". That will remove all the fucking question marks from your map.
Congratulations, you just made the game five times as interesting. You'll still come across them, but you'll actually come across them organically, through exploration, and not because you feel like you are obligated to clear them out.
As for main and side missions, it's a bit more difficulty because this ties to one of the biggest issues of the game: it's not very well balanced. It's very easy to get overleved by doing main story missions first, causing the sidequests to become rather trivially easy.
In general, you are supposed to be switching. Do a bunch of side missions first until you reach the proper main-quest level, do a few main quests, then go back to side quests. The problem is that the game is balanced around being playable almost without doing any sidequests, meaning that the proper "step-wise" level requirement structure does not work as well as it should be.
The good news is that most of the really good quests ARE partially incorporated into the main quest through characters. So you'll find that lot of it just kinda comes together organically.
Just don't do things compulsively - pick up on what ever sounds interesting at the moment and what is close to your current level.

The strategy guide for Skyrim GOTY (and maybe the special edition) comes with a map.
