There had to have been some way to cross through the mountains behind Gondor, coming from Enedwaith. Every other mountain range had some way through, and Gondor wasn't even being threatened from the North.

Also, is there a mountain pass from behind Minas Tirith to the interior of Gondor? Because if so, I didn't account for it here.

The Ring is not only an incredibly powerful object, which many cultures wanted to seize and use as a weapon (and assumed they could), it's also got a will of its own and warps the mind of anyone wearing it or close enough to be affected by it.

In hindsight we can go over 'but he should have's all day, but, really, Sauron made an object that literally no one would be able to just destroy - either because of their desire for its use or because it made them unable to give it up.

Sure. But those artworks didn't say that Sauron was literally just a swiveling eyeball. The Eye is a representation of Sauron's will, as well as being his heraldic motif.

Jackson, as a filmmaker, decided that he couldn't have a major villain not appear in any capacity visually. So he made the Eye more literal.
