Finish the first season of DS9 if you haven't already. The last two episodes of S1, "Duet" and "In the Hands of the Prophets" are pretty good and should give you an idea of the quality level for the rest of the show.
Well duh, they're all related. On one of the holo screens you can see a family chart of Khan and at the bottom of the screen is Kirk's dad, with the small child on the other end of the tree.

It's got some great episodes.
Season 4 is almost all 3-part story arcs with schenanigans on vulcan, augments and a guest appearance by Brent Spiner, the romulan episodes.
As far as stand alone episodes go, there are plenty. A good rule of thumb is avoid temporal cold war episodes, and watch anything with based Shran making an appearance.

Season 3 and 4 steer more towards larger story arcs, but "Observer Effect" in season 4 is about as perfect of a trek episode as you can get.
tl:dr Enterprise gets a lot of bandwagon hate, but it's worth watching.

Farscape. It's a bit like Guardians of the Galaxy, except not a Reddit meme. I don't know how you personally feel about Reddit memes, but some people in these threads are very afraid of them.

The TOS movies are a good place to start. I'd say start at the wrath of khan, while I love the motion picture, it's a pleb filter, and I don't want these threads filled with SO BORING NOT EVEN ANY 'SPLOSIONS.
Season 1 is a lot better then people give it credit for, season 2 was hamstrung by the writers strike, which led to using unused scripts from the TOS era, and half finished bullshit. It's literally the reason why the season finale was a clip show.
So if you're in season two and feeling restless, just push through. When riker gets the beard, and gene gets kicked upstairs, the show peaks and sets a high note the franchise never beats.
Trek Virgins don't get to skip episodes.

I only watch DS9 for Garrak, Quark, Gul Dukat and the dominion war. The rest of it is quite boring. There are a few other likable characters, like Dax and Obrien, but apart from that it's quite dull.

Theres a reason for that. Paramount and Warner Bros purposely took what they liked from the Babylon 5 script and put it in the DS9 script. Making DS9 nothing more than B5 in a Star Trek universe setting.
Funny enough when I was 12 and hanging around at my grandmas house, she lived in an apartment complex with indoor shared laundry area, I "found" wrath of khan in one of the lockers where people stored their excess shit, and watched it, don't remember much except a long lasting good impression it made on me, I'm only watching the series now cause a girl I'm with is a self proclaimed trekkie.

The TOS movies are all pretty good, except V. TMP is like 2001 meets star trek, visually stunning, but will bore the shit out of normies. And even final frontier, while it's a train wreck, is still enjoyable when you learn about the production. It was pretty much cursed, and anything that could go wrong, did, the only missing a gypsy curse.
2, 3, and 4 are all pretty self contained movies, but it's got a larger story arc to it. Most people hate on the search for spock, but aside from the last act it's some great trek and world building.
The Star Trek VI: The Undiscovered County is GOAT. Like wrath of khan, it's a legitimately great movie despite being genre trash.

Things like the klingons weren't the writer's fault. It was a practical limitation of production. I liked that they tried to give an in universe explanation to it, and it's a satisfying one. Certainly not offensive.
The other thing people complain about is the borg episode, not realizing that piece of shit first contact is where those borg came from.
Voyager was mostly crap. Janeway was the worst starship captain ever.
Every episode with battles in:

All the crew that died on board died because of her and her inability to think properly.

The computer should know the DNA of all federation species (thanks transporters!) and the specific DNA of all crew members. Any being that doesn't register as crew should be beamed straight to brig.

Every episode is them figuring out which questions to ask the computer to get it to tell them what to do, so they can then tell the computer to do what it suggested in the first place.

That always felt strangely comfy to me. The hamfisted editing and cuts during the fight scenes he always just struck me as an intentional (possibly unintentional) nod to the ones from TOS. There was no saving the planet at this point and the fates of his crew and Spock were largely out of his hands. He just wanted to pummel the guy who had his son killed.
It worked a lot better than, say, Generations, where his stunt double is absurdly out of place and having the lives of 230 million people rely on a "classic Kirk punch-up" felt like really forced fan service by that time.

I'm halfway through Voyager S3 for the first time and so far it's incredibly predictable and takes the safest possible route for almost every plot.

I just started season 4 of DS9 and I'm loving Worf. He was probably my favorite character in TNG. I'm watching The Sword of Kahless right now. Worf's obsession and fetishization of his own culture is fascinating to me.

DS9 has been good to me. TOS is still my favorite Trek, but the comedic timing in DS9 is leagues better than any other series. I'm loving all the bajoran babes too.

She had some good episodes but her character seemed stagnant to me, after a point.
Even if the other characters weren't as iconic as the creators had hoped, turning 7o9 into a Deus Ex for a lot of episodes certainly throttled any future character growth they might've had.
Then, they never really seemed certain what to do with Seven herself. Did they want a Borg on a Federation vessel? Did they want a redemption story? Did we want an anti-hero?
They definitely touched upon all those themes but for whatever reason never settler on one and so Seven's real potential as a plot device became lost in the wash.
