I've always felt that it represents that the galaxy was once a thriving place with advanced technology and after the rise of the empire they lost everything and had to start over. similar to how after the fall of Rome we fell into a dark ages and had to start over. The same concept is applied to movies like Mad Max or Planet of the Apes.

Ahsoka didn't even know Anakin was Vader until years later.

Well, she left the order before becoming a knight, so he didn't get promoted to master. And since it was the council's fault that she left, he continues to be butthurt at the council.
