Sandbox "be whatever" campaigns are the absolute worst unless that "be whatever" happens to be a level 12 badass trying to save Golarion.

Cause Flower Court has a very out-of-the-box chargen guideline with the whole ideal thing. That gets people excited for what Protag is planning.
Meanwhile, something no-frill like Ironfang or Hell Saboteur based on an AP is not gonna be as popular. Essentia is low-magic, which should tell you more than enough.

Given how diverse party compositions tend to be, you shouldn't be questioning the paternity of your child if it's clearly like you in appearance and species.

If the campaign allows the characters to level quickly, they might still be nobodies at level 15 and up. But if you played from level 3, up until level 15, you should be significantly invested in the world you are in. There should be NPCs you are friends with, and townspeople that speak your name when they talk about influential individuals. A Cleric must have inspired people to pursue their faith. A Druid may have inspired the town to cordon off some land for a small grove of trees named after her. The Bard is no longer the only one to literally sing of his accomplishment. The wizard now has people approach him for advice on arcane matters.

If you have these things to ground your characters, I feel the epic stuff is fine. You can't cast all your spells then take an eight hour nap because if you do, the army of an enemy nation will get dangerously close to the village of people you saved from that cult two years ago. You could have a base of operations that you return to, not just to make sure that it is safe, but that the people you got to know are as well.
