I've given it thought and there's a few reasons here and there

Appearance is one of the first things you notice with anime girls, and obviously so, if you think a character looks good then you can easily get interested in them and even see posts with a girl as a reaction image. That girl not your style? No worries, there's millions of others which could be appealing to you. They have their own general style, e.g. clothing, hair, etc. and it looks varied compared to 3D that all aim to look similar. They might have special moment where they dress different, but they have their own set of style than following the majority.

There are generic tropes, e.g. tsundere, shy, studious, etc. but that's not a bad thing, it gives them some sort of distinguishable character to hook you in. You can get perfectly normal characters too depending on the anime, that have slight quirks and they're generally fine, you might get some who are the artistic type that likes drawing or a calm, serene girl who prefers to enjoy tea. Its really rare to find these types of characters in the real world where most girls are entitled and emulate each other to fit in, because being different is seen as WRONG. Even tsunderes have a soft inside with their hard shell.

Story and episodes to expand on their character will make them seem more interesting and like you're learning about them more, they might even give a MC an experience they never had before, though I hate if they just make the guy some chad who could potentially get all of them at once. You could relate easily because they're scripted to relate and be human.

People who know they can't touch 2D, and their odds of touching 3D are the same, so might as well go for the more appealing looking one, a.k.a the one drawn better than most women look.
