Catholics are only one branch run by Pope, Orthodox is run by different Patriachs with different branches that practice different customs for example, Ethiopian Orthodox is different from Greek or Russian Orthodox.

I think he was talking about Eastern European Catholics in the Latin Rite (like Poland); though Eastern Catholics (ie: in the Eastern Rite of Catholicism) are also great of course.
As best I understand it, orthodox is almost like saying either progenitor or archaic. Whichever deviates from the original is the non-orthodox, and the original is the orthodox. Roman Catholicism diverged by adding a Pope into the mix, leaving the other churches as the orthodox ones as a result.

I don't understand what you are asking. The Church came before the Bible; the Bible wasn't put together for many-many years after the Crucifixion of Christ. Christianity existed before the Bible is what I am saying.
Sola Scriptura didn't exist until the 1500s.
This is why 'just read the Bible' makes no sense unless you want to disregard the teachings of the Apostles, Church Fathers, etc.
I grew up Baptist but have been researching the Orthodox faith a lot over over the past year. I'm sold on its condemnation of a lot of things, like sola scriptura. Still struggling with whether one can lose his salvation, the free will question and all that
Personally, it far better to rely on evidence to determine about the identity Christianity, rather our own interpenetration and denomination. Otherwise, who we would based on how we feel than what things are.

The churches in Egypt and Syria are in communion with occidental church, often called the occidental orthodox church, which schismed from the true orthodox church.
Then you have the church of the east, which schismed from orthodoxy and is not in communion with anyone.
Actual orthodox Christians exist, mostly in Lebanon iirc, but they are a very slim minority in the mideast. Even more so since the last decade for obvious reasons
