Okay, you're talking about bioavailability. Which is actually a thing.

a) vitamins are more easily absorbed by the body if they are consumed in a medium that can dissolve them well. Example: Vitamin A is fat soluble,and hardly soluble in water. If you tried to take a "vitamin A supplement" that was based in water, you would have poor outcomes. Conversely, a molecule with a charged or highly polar region like B12 is soluble in water but not terribly soluble in fats.

b) some elements have poor bioavailability unless they are ligated or coordinated to an organic molecule. iron bisglycinate (where an iron ion is coordinated to two glycines), is absorbed more easily.

c) this is a good thing for elements like mercury. Elemental mercury, the silver liquid stuff, is NOT absorbed very readily into your body. Methylmercury, however, is.

d) any compound made up of a positive ion and a negative counterion is called a salt. Not just the shit you put on french fries.
Converting neutral molecular compounds into a salt form increases shelf life, stability, solubility.

This is why almost every drug is converted into a "hydrochloride salt", or another salt like a fumarate salt.
