I don't own a GoPro and I don't remember what it is you
can actually control in it.
But, for fast movement you need fast shutter speed on
your video. Fast shutter in this case (your subject matter
on the OP picture) would be something above 1/160 - 1/200.
For comparison, think that you need at least 1/125 to freeze
a person running. So a speeding bike would need more than
this.

On the downside, this means that your camera, if it supports
rising the shutter speed, will also raise iso or it will need bigger
light sources than what it needs in 25fps/-1/50. This in turn
means that your stills will be with more noise and maybe
unusable.
