3rd gens aren't as bad as the 4th gens to work on. You actually have a decent amount of room.
Spark plugs are now quite easy to change on my 4th gen with aftermarket headers. Takes 20 minutes. With the stock manifolds I agree though, it's quite the task to change plugs.
