Interesting fact: the original Faust pitch had Fluttershy and Pinkie's species inverted (as it was with Posey and Surprise). So Ponk was a pegasus and Flutters was an earth pony.
This meant that each 'species' had a cutiemark theme: pegasi had balloons and lightning strikes, earth ponies had apples and flowers (=Posey's cutiemark), while unicorns had Stars and Diamonds.
So, things that fly, things that grow and things related to mysticism.
Easy, they had no other choice: the only G1 pony they had kept the rights for was Applejack. And that's pretty much the reason why there's an Applejack in every generation.
To avoid legal issues, they had to recolor the ponies and make some subtle change to avoid a too striking resemblance. So, instead of Sparkler, Twilight, Surprise, Firefly and Posey, we had Rarity, Twilight Sparkle, Pinkie Pie, Rainbow Dash and Fluttershy
