Because stealth limits your options for shaping pretty significantly. Pretty soon, every new fighter will look extremely similar to the F-22 or F-35 unless somebody gets bold and tries for no-tail fighter.
Once we developed materials with same properties like metal (like some new kind of ceramics) we will have planes wich are in modern radars undetectable and thus gives you more aerodynamic freedom.
