Cooked steaks are simply safer.
Unless you get to perform or supervise every step of the process from live cow to served steak, you can't guarantee that you aren't being served reconstituted/glued steak.
Since the meat chunks have more surface area than a real steak, there's a greater chance that they have had bacteria deposited on them. And since the meat chunks are glued together to form a "steak", some of the bacteria-bearing surfaces on the constituent chunks will end up facing inwards, deep inside the steak. The bacteria remain comfortably in there, unharmed by normal refrigerating procedures and rare cooking methods (because the heat doesn't reach all the way inside).
Maybe in Argentina m8, our steaks aren't glued together here. I thought you guys were meant to have some of the best quality meat in the world?

I've heard this too and also that in Jamaica they would make ovens covered by leaves to cook their jerked meat as it would hide the smoke and they could survive without being found in the jungle, which actually gave it a great taste so they still do it today
There are historical reasons for burning the meat.
The people who usually hung out with cattle couldn't be assed to carry grills and pans around. They had to impale the raw meat on big sticks and leave it in front of the fire for a long while; that was the most sanitary way to cook that was available to them.
It is somewhat wasteful, but meat was abundant back in the day.
"Chimichurri", ironically, was introduced by the english. The word itself is an imitation of the phrase "give me the curry". I suppose it was used to add some flavor and also counteract the dryness of the burnt surface of the meat.

Goat and lamb in argentina is way better than beef, their meat quality is great, but italian influence, tropical climate and humidity in the northern part of the country, and an extreme love for getting drunk while grilling makes the argies love well done beef too much. Lamb in argentina is GOAT.
