Serously, Paris is something to see. Going to France and avoiding Paris is retarded, don't listen to these provinciaux (though I am one myself). It is much more dynamic and frenetic than the rest of France, which is not always a bad thing.
And well, it depends on what kind of tourist you are, but if there's a tourist spot, it's for a reason. It's better if you can avoid peak period though.
Mont Saint-Michel is an amazing view to any tourist, definitively a must-do.
If you look for villages, I would also say south-west, in the area around Toulouse, Albi...Food is nice too.
