There's a difference between "Caste" and "Varna".

Think of castes like tribes. You cannot convert to a tribe.
Varna is the indicator of position in the social hierachy.

So you'll be the bavarian/prussian/whatever caste and your Varna will depend upon your profession.

The inheritability of caste isn't really well discussed in the earlier texts (not sure about the upanishads), but it becomes a thing in the sastras and the purans.

Then there is the division between caste as a social position and its conflated position with some sort of ethnic-geneological thing like Ghotras (which have become linked with certain professions)
