For retaining French I essentially think the things I say and translate them in my head. If I find I don't know a word or grammar, I'll find what it is. This way the things I say the most are always fresh.

with a teacher, homework, fellow students
Lots and lots of exposure. Hundreds of flashcards nightly make me want to kill myself. This is for Japanese, at least.
