don't own anything brand new by any means but I notice pretty much no practical difference between the various SB, Nehalem and Core2 systems I work with on a daily basis except for maybe RAM size contraints on VMs, hell you can still daily drive LGA 775 Pentium 4s pretty nicely if all you do is surf the web

Apple didn't really have anything to do with improvements in those categories, it was a natural progression. Your stated reasons are exactly why thin ultraportables were a niche product, now they're good enough for deluded faggots who think they're too good for a tablet.
Apple didn't invent those technologies. Apple brought those improvements to the pass public. Capacitive touch technology had been available since 2000 but no one else bothered to use it. You could get a QXGA Thinkpad in 2006 but it would cost you $5000.
"Thin is in" cancer was inevitable as power efficiency went up and costs went down, as was an increase in resolution with streaming services. Though Apple did push it to ridiculous levels, surely.

it's nice to have things like expresscard, docking, VGA for presentations, ethernet for hardwiring into networks where wireless connections aren't feasible or unreliable, multiple high-power USB ports so I can charge a phone and use external hard drives/flash drives, discrete headphone and microphone jacks

Every time someone buys the vote with their dollar, it doesn't even matter if a company is actively making sure to not copy apple.
When not enough people buy the functional alternative the price will go up. So even though the functional alternative exists it become non-viable since getting a apple-ish device with workarounds is much cheaper.
This, only that the problem is that 80%+ of people are like that. They are more interested in fashion than tech, so their tech products need to be fashionable.
