I use my raspberry pis for making easy interfaces for shit I make with GPIO. If I wanted to run low-usage server software, I would just fire up some VMs on my server (or my desktop if I didn't have a server).

Not everyone has the hardware or money to run a standalone server, and they want the accessibility of not running it on their main computer. A pi is cheap both in hardware and power drain, and works excellent for simple tasks.
