Engineer for Food Technology here. The mercury is often only found in the high priced tuna pieces.

The tuna that goes into the can is really low quality garbage tuna, and incredibly lean. They use the shit tier tuna like Skipjack and Yellowfin Tuna for the cans, these tunas are usually not high in mercury. The mercury is also usually "stored" with the fat (only found in high priced marbled tuna cuts).

Don't worry, tuna cans are amazing.
