What should I be doing with 155lbs of deer meat?
Deer is the fruit of the forest. You can barbecue it, boil it, broil it, bake it, saute it. Dey's uh, deer-kabobs, deer creole, deer gumbo. Pan fried, deep fried, stir-fried. There's pineapple deer, lemon deer, coconut deer, pepper deer, shrimp soup, deer stew, deer salad, deer and potatoes, deer burger, deer sandwich. That- that's about it.
get out the cook book
get creative because otherwise its a waste.
Invite people over and share.
Even if you do end up wasting it on a failed culinary experiments its less of a waste.
That or go to some eating establishments and try to sell it.
Dad's a butcher and we have a hunter friend that lives next door. Hunter friend tries to get 2 deer per trip, dad cuts 'em up nice. We get free jerky, the rest of the cuts go to the hunter's son and his family. They always comment on how nice and fresh the meat is - never 'hairy' like at their friends'.
I had this problem when I cleared my ranch of feral hogs last year.
I sell it at farmers markets in Austin and San Antonio to stupid hipsters and limp wristed California transplants as "free range", "nature fed" meat for $18 a pound. I pull in about 2k a weekend off the dumb fucks.

Depends, are you able to eat it all before it goes bad?
How long are the best ways to preserve it going to preserve it for?
The best option depending on how long you have to get rid of it may be donate it to charity/soup kitchen, as depending on where you are, just outright selling it may not be a possibility.
