Owen probably cared about Anakin because he was distant family, but Anakin might not have kept in touch all that much, due to the memories of Tatooine.
His meeting with Anakin didn't seem very...good. Maybe he compared it to the stories Shmi told and figured that Jedi training makes you an asshole. Which probably just suggests Shmi was a really nice step-mom who Owen appreciated. She seems the type.
Maybe Anakin's going out and recovering her meant something to Owen. Said something about family where everyone else had given up?
Hard to say, really. We have so little data on Owen, but what we do have shows that he wasn't the softest guy but still honestly cared about his family. Some people are like that. Good people who can't help but come off like an asshole.

I hope Aphra tells him the truth when she's interrogated, and mocks him for being so obsessed with avenging his father's death but never wondered about his mother.
I somehow doubt Obi-Wan told Owen the empire might be looking out for the boy, especially since Obi-Wan likely (and correctly) believes they don't know. Likely why they didn't bother changing Luke's name.
No clue if Obi-Wan even knows Vader is still alive by this point, he seems a bit out of the galactic news chain. No going into Mos Eisley for his holopaper.
In the Darth Vader series, Vader visits Owen's farm some time after they've all been killed while following Luke's trail.
Yeah, that was before he found out about Luke's relation to him and was on Tatooine a few weeks prior to this issue for business with Jaba.
have you fagets read the star wars "manga"? it's a retelling of the original trilogy but it's pretty cool since it focuses on Luke a lot more.
It made me remember just how much of a kid he was in the OT.

This Ben defending Tatooine from sand people plot has been tossed around for years as an idea for Kenobi spinoff movie. Glad theyre taking out that crappy thought right here and now in canon
Obi-wan chapters are after ever major arc is completed. So after every 6-8 chapters or so.
AT-ATs didn't magically start being used just for Hoth, anon. Them being shown prior in the timeline to ESB does not take away from the hype of their first on screen appearance in any way.
There's very little in the way of walker progress for the Empire to even pick from, though. AT-TE in PT changed to AT-AT after some prototypes. Singular one-person walkers go from the ones in ROTS, to the ones in Rebels to the AT-STs.
You have to think of it from the in-universe side as well, not just the "it's lazy for real life reasons" side.
There were some fun theories that thanks to Anakin that is why Tuskens fear robed figures.
Unfortunately for that theories Anakin leaves no survivors.
