That's tough because I've cooked for myself long enough that I just go by feel but I'll try.

1/2lb shrimp shelled and devained
4 cups chicken broth

Simmer shrimp shells in chicken broth for 30 minutes. Remove shells.

3-5 Thai peppers, sliced lengthwise
1 tsp galangal or ginger finely chopped
1tsp garlic finely chopped
1 stalk lemongrass, pounded and cut into 3" lengths
4 lime leaves if you have them
4 Tbs of fish sauce
4 Tbs of lime juice

Add everything except the lime juice/fish sauce mixture and shrimp to the stock. Simmer for 15 minutes. Add fish sauce and lime juice. Add shrimp and simmer for 3 minutes. Feel free to adjust to your preferences. As I said, I'm not sure about quantities.

I'm not going to whine about "people not delivering yet" since there have been people showing genuine interest in the idea, AND because I did give a 7+ day timer upon pressing the button.

That said, an occasional bump here and there will be needed to keep this from being archived while people plan their dish, even if it's two guys arguing about Korean food.

Kiribati delivery. I am not too good with fish, sorry about that, but I made sauce, with pineapple coconut, lime and some curry poweder. (Curry powder is frequently used in Kiribati) The rice is made with coconut and some lime juice. The fish is Mahi Mahi with curry powder, coconut milk and lime juice. It's fairly easy to make. The biggest problem would be getting all the ingredients. There's nowhere within a hundred miles of me that stocks saeujeot, for example, and I had to make a fucky substitution for gochugaru. If you live in a decent city you should be fine.

had a busy weekend so I wasn't able to make as much as I wanted but here's a very mini tumpeng. Just some coconut turmeric rice shaped like a cone and some garlic turmeric chicken. I got Guyana. After doing a bit of research I think I will try to make metemgee. It is a kind of creole stew with yam, okra, dumplings, cassava, and plantains in a peppery coconut milk sauce, served with a side of fried fish.

It's been a few years since I made kimchi, and I didn't actually do it right (at all) back then, so it'll be fun making it right.

The screenshot is just the first Kimchi recipe I found, I'll be looking at more.

Gonna use some azuki (adzuki?) bean paste I have onhand instead of the sugar. Azuki bean paste is hella sweet and will give a nice savoryness to it too I think.

Definitely, I can't say that I'll have all ingredients perfect but I do live near a YUGE Asian food stuffs supermarket that just opened so I'll do my best. You'll have to excuse my messy kitchen.
