I usually feel the need to eat meat with almost every meal, but I've recently noticed that chocolate seems to work as a substitute.
Can someone explain the gastronomy behind this?

It's all the fat in the chocolate. You could eat a piece of butter and feel sated just as well, without all the added sugar.

Most of the dark chocolate is made using additive of serum from blood of cows so this might be the reason that your body is reacting this way.

Your body craves the fat. That's a good thing, it means your digestive system is keyed to processing and burning fat. If you craved or needed sugar with every meal, it would be a serious problem.
