Got no cookalong, but here' some comfy lentil stew I just made.
Could have cooked for a little while longer, but fuck it. I was hungry and it's actually pretty good.
I'm a different bro but this guy is one of my fave posters on the chins.
The recipe for the sunomono dressing I used was 1/3 cup of rice vinegar, 4 tsp of sugar and 2 tsp of soy sauce. I thought it was way too strong and I watered it down with almost a cup of water. I added a lemon to give it more flavour and then chilled it for an hour. Not the same dressing I'm used to but it satisfied the craving. Pic was before I watered it down.
I couldn't find a medium sized rice noodle so I settled on the tiny ones. They tasted okay but it felt like I was eating hair straight from a shower drain. Going to go with the bigger ones next time. My lemon was not cooperating.
I made two cups of rice and put it in a bowl. I stirred in a bit of rice vinegar and let it cool off.
I cut up the yam in flat/thin pieces and boiled them. Once they were soft I strained them and rinsed them with cool water.
I used king crab flavoured Alaska pollock, otherwise known as imitation crab. Chopped it up and then mixed it with some hellmanns mayo.
Peeled cucs and cut them into thin strips. Also cut off the seeds.
Cut the avocado while it was still in the peel. Then used the knife to loosen it and squeezed it out. Squirted some lemon juice onto it so it won't brown right away.
How would you go about cooking pic related? I'm going to out done butter in a non stick pan and cook on medium until done.
I cut the nori sheet in half because I prefer bite sized rolls. Shiny side down. Guess the rice stick to the rough side better. Also a good idea to a bamboo sheet but plastic wrap will have to do.
Grabbed a bowl of water so my hands stayed damp so the rice won't be clingy. I grabbed a small handful and evenly spread it across. You don't want too much or too little. Then I sprinkled toasted sesame seeds onto it. After that I flipped it so the rice was on the bottom.
For the California roll I added a small amount of the fake crab mixture along the middle, a couple strips of cucs and a few pieces of the avocado. Used the plastic wrap to roll it up a bit and and gently formed it as a went. After I had my sushi log I put it on a plate and using a sharp knife ( if it is dull t won't cut properly and get squished) I cut it in the middle. Then I cut the ends next because the are weird then finally one more cut. So six pieces in a roll.. I made four of them. My rolls were quite tasty, they just didn't look the part. I need more equipment.
Following the same start as the Cali roll, the Yam roll was much easier. I cut the yam into thinner strips and put them in and rolled them. Cut the same as before and poof, four rolls made. I am embarrassed it took me two hours to make everything.

Did you ring up a butcher and ask for 80/20 mince? I take it you'd have to ring them up before hand and order it, right? I normally just buy mince from the store, no idea the lean meat to fat ratio.

Fully loaded baked potato soup, it has the cheese, green onion, sour cream, and bacon you'd put on a loaded baked potato already incorporated in the soup. It's bangin, I highly recommend it.

My wife, who works 3-11. Sides are steamed broccoli and red skin potatoes that are cut up, boiled, then add parsley and general mashed potato ingredients without making, just stir. I used milk, sour cream, and salt this time.

1 and a half cups of rolled oats and a cut up banana and some blueberries.
tastes alright, I freeze my peeled bananas and blueberries, cook the oats and bowl them then put the frozen banana + berries in the bowl and microwave it for a minute so I can easily chop up the banana.
I decided I wanted some salad rolls to accompany my rolls. I also needed lunch for work tomorrow.
Using the leftover crab from my Cali rolls as well as some shrimp sauce.
Roman lettuce, yellow peppers and the left over boiled yams and avocado from last night.
Oh and shredded carrot.
Brought a pot of water to boil and threw in some rice noodles. They cook very fast, within minutes so don't take your eyes off of them.
They continue to cook after they are drained so you can take them out just before they are done and let them sit for a few minutes.
No, just plain old salad rolls. I went for a seafood salad sort of roll. I will be making spring rolls soon though and I'll post in one of these threads when I do.
After they rest you can cool them off. Salads are cold.
Now for the rice sheets, get a bowl of warm water and place it in for about 5 seconds. Be gentle as they will break easily. Then take in out and lay it on a plate for about 30 seconds while they turn jelly.
Looks good as fuck. I only skimmed thru, what you said, so I have a question you may have answered: how much cheaper is this than just buying some cheap pre-made rolls, either in a grocery store or in a restaurant?
Put the ingredients off to the side so it is not quite in the middle. I started with the crab first then I put the noodles,carrot,avocado and lettuce in top. I goofed up though and forgot the lettuce in this one.
It is cheaper but more time consuming. Once you have the main ingredients (sushi rice, rice vinegar, nori) you can just buy whatever else depending on the roll you want. I only made so many because it was for two, plus I had enough for lunch and then enough for dinner. But you can easily just make one cup of rice and probably make at least four rolls depending on the size. Plus you know exactly when it was made and what went into it.
Once you roll it once, roll the ends inwards and roll again.
Sleep tight little salad.
Here's the final product, I dipped it in the shrimp sauce and it was delicious. I love salad rolls because they are so easy and fast to make.
It really just comes down to how often you eat rolls. If you eat it once in awhile it won't be worth it to buy all the ingredients and let them sit in the cupboard. But if you eat it often you'd save. For a big bag of sushi rice is about $30, rice vinegar is around $5-$7 and nori sheets come with a lot of pieces and is around $3. If you were just making Cali rolls you'd just need some packets of imitation crab, the one I got was around $2 plus mayo which most people have anyways. Then an avocado and cuc. For one Cali roll here costs $4 and for the most unique rolls $10. Rice is the biggest purchase and that is something most people buy anyways. A big bag lasts me a long time.

I tried baking a sweet potato for dinner, it took fucking forever, like over an hour and by the time I decided fuck it and dug into it it wasn't even soft throughout it. My oven is a pos, it's old as fuck and isn't fan forced.
If you want it creamy, use sour cream and not mayo. If you want no cream whatsoever, use a mix of mustard, vinegar, white wine, and chicken stock as a base with lots of fresh herbs.

You want to know how you melt cheese onto a burger when you're cooking one, if you want to do it fast? You squirt down some water around it and put a fucking cover over it, so that the steam melts the goddamn cheese. You are literally doing the one thing most likely to make your fucking roulade melt and fall apart. Like, you chose the one cooking method that would literally be ideal to fuck your shit up.
You realize you should have gotten the barest layer of oil smoking hot in that pan, put your shit in, seared both sides (which while not important for "sealing in the juices" of the meat, can actually do that shit with forming a cheese crust), and then, depending on desired doneness, either chucked that shit in the oven or proceeded from there to add liquid and continue cooking.
Christ, I don't even want to know how undersalted your broccoli is.
How to make deep southern authentic german grandma potato salad:
1. Boil a bunch of big starchy potatoes (peeled). When they're close to as soft as you'd want them for mashed potatoes (i.e. if you tried to mash them as is, you would get really fucking lumpy mashed potatoes)
2. Meanwhile, mince some white onions, and get em sweating in a small saucepan (use a little oil dipshit).
3. Adduce to the saucepan a fucking cube of beef bouillon, and enough liquid to dissolve. I know, weird, but think of like adding Worcestershire sauce or something.
4. Add like 1/2 cup of oil, a bunch of vinegar (basic red or white), and a judicious amount of pepper to your soon to be beef vinaigrette, and whisk it up.
5. Slice your potatoes between 1/4 and 1/8 inch thick directly over/into a bowl. Irregularity and breaking is to be expected, but beneficial because "omg rustic" and more starches coming loose will thicken the salad.
6. Add your vinaigrette, mix. Best served lukewarm.

Step 1 - Gather ingredients
Step 2 - "measure" out your beans and get ready the last of your veggie stock
Step 5 - finish prepping all the veg minus one jalapeno and drain the canned ingredients. This is the best time to post to 4chan since you will be waiting a couple hours for the beans to do their thing. You don't want the veggies to become mush after all...
Step 6 - add a cup of water after almost boiling away all your stock. Reduce heat and allow to simmer. Also add your tomatoes. I forgot to mention I added some of the seasonings earlier and added a bit more now based on smell. Still way under what we will need I think but less is more for now.
Step 7 - Pause your movie at the halfway point, brown your corn, and add it to the pot. Continue movie.
Step 7.5 + 8 - Add one more can of tomatoes. No draining this time. Brown/carmelize the onion with garlic and add that too.
Beans are doing better than I thought. Time to brown the sweet peppers and jalapeños and add them in.

Turn your stove all the way up, put a pan on it, go smoke a cigarette, come back, add a knob of butter, crack an egg in, and 30 seconds later you will have a perfectly burnt as fuck sunny side up egg.

Making an Asian themed kinda dinner tonight. Pork chops, Chinese spicy potatoes, veggie stir fry, rice.
Dice potatoes like so. Peel Russet, otherwise keep the skin. Slice bell peppers
Sauté garlic and green onion white ends for about 30 sec on med heat. Add potatoes and peppers, turn up to med high. Stir occasionally.
Sear porkchops on med high, about 3 min. Preheat oven to 375
Add vinegar, rice vinegar, and sambal olek to potatoes, turn heat to med, cook til potatos are tender. (wish I had Sichuan dried peppers, you'd sauté those with the garlic mix at beginning.
Flip, sear 2 more mins, baste with leftover marinade, put in oven. Potatoes almost done, gonna stir fry some veggies. Wish I had gas and a wok.

I concur, I sound more bitter than I really am. Thrilled about the game and I truly am excited to watch 2 great defenses play. Didn't graduate from Auburn, but I was there in '08. After that, I realized that I wasn't a good enough student to justify out of state tuition. Went back to GA and went to Kennesaw State and graduated there.

nah I was at this game that ended 6-1. look at them penalties there was a 5 minute stretch where it was 5 on 3 the entire time it was awesome.

My rebuttal: Roasted beef rump with a horseradish and tahini crust, potato and celeriac tartiflette, roasted carrots and asparagus, and a madeira/mushroom jus.
its a tenderized fajita steak, they are almost always well done but its still juicy and tender, i really wonder how they manage to make well done beef so good at most of these places, there is a poblano filled with cheese under that steak btw

Thanks man, the carrots are chantenay, a french breed that's a little sweeter than the dildo type. Had to make the tartiflette with brie, because shop didn't have any reblochon. FML.
Btw the secret to a juicy well-done steak is to sear on high heat, then lower to medium heat until internal temp reaches about 160 degrees. Takes a while, but it's the only way to not make the end product suitable only for cobblers. A properly-cooked well done steak is real nice, it's just that it never cooked right is why it gets so much hate.
