What's in your pot today?
I've got chicken cacciotore
made 3 quarts of broth recently.
2 chicken carcasses worth of bones
2 medium yellow onions, skin off and quartered
2 celery stalks, diced thickly
1 carrot, split in in half lengthwise, diced thickly
4 garlic cloves, halved
6 leaves thai basil, torn in half
set on low, cook for 12 hours
add salt to taste upon finishing or when using stock to make soup
Not using a crock pot, but I have a chuck roast braising in the oven right now. Should be done in an hour or so and it smells fucking delicious.
I seasoned the roast with salt and pepper, seared it in the dutch oven on all sides and took it out. Cooked up a couple sliced onions, some celery and sliced serranos with the oil left in the pan and some butter. Added some rosemary, thyme, a couple bay leaves, salt, pepper and cooked it for a while. Then added some minced garlic and cooked a bit more. Deglazed with some wine, added some beef stock and tomato paste and cooked that down a bit then dumped in a bag of baby carrots and put the roast on top, covered it and stuck it in the oven at 325 for a few hours.
Lamb chops, red wine, carrot, onion, celery, diced tomatoes, garlic, rosemary, thyme, chicken stock.
Gonna make some mashed potatoes to serve it with.
I just got fired because of those. I was mad at the manager so I cut open a 50 pound sack of live crawfish and threw handfulls of them up and down every aisle. By the time I got caught the store was crawling with live crawfish.
9 and a half hours later I'm slightly drunk and the house smells pretty great.
