Comte is one that comes to mind for me. I love hard, flavorful alpine cheeses so it pretty much ticks all the boxes for me

There is no single favorite cheese for me, but the one I buy that most is sharp white cheddar aged atleast 3 years. The older the better.
I'm also a fan of Stilton, Old Amsterdam Gouda and Parmesan.
I'm looking to try out some sort of cheese with holes in them. The only ones I know are Swiss cheese (which is tasteless) and Jarlsberg (Haven't tried and can't find).

Swiss isn't tasteless and Jarlsberg is fairly widely available. Try a local deli maybe? I don't know what to tell you. Where do you live? Also, really sharp nicely aged cheddar is great. I've had a seven year cheddar a couple of times. Love it. Wish I could get my hands on it more often.

Peccorino Romano for hard on pastas or carbonara.
1-2-year aged gouda for medium-hard; on crackers and shit.

It was my job as an appentice to do all the cheese plates for pastry section during service. At first I hated the smell of the blue cheeses but I was encouraged to taste them and after a while I really grew to love them. This is my favorite.
