to clarify this is extra creamy. I also add like 2-3 times the amount of margarine.

I like to change it up but sometimes if i eat sharp cheddar or the normal kind I add more milk so it is a bit runny.

Nostalgic.

I could probably make a better macaroni and cheese if I wanted to follow seriouseats recipe. But there is something to be said about the old blue box, some milk, and half a stick of butter.

Naturally I'll toss in some sort of other cheese and a bit of pepper. Maybe even fry some hotdogs for some substance. Otherwise I'll eat it as a side on the rare occasions that I want it.

The only thing good ive ever added to mac and cheese was chipotle hot sauce.. which makes me wonder how barbeque sauce would taste in it. Its hard to add flavor to mac and cheese because everytime you add something it just isnt the same the next time. Boxed macaroni and cheese is weird like that.

The milk and butter are irrelevant. That certainly isnt the case where i live.. Flour, cheese? Are you talking about making a cheese sauce? That would be very expensive. I have tried a few types of bulk powdered cheddar cheese. Most of it is ok, but you have to use alot, like 3/4 cup.. it is a different product than what is it the boxed version. With the cheapest bulk options i could find at winco or online, walmart's house brand is still the cheaper deal.. and i would guess any generic macaroni and cheese inst far off.

Its good. I've been making it myself since I was 6. For 15 years I always put the powder in the bowl, butter, milk and whisked the sauced separately. I whisked in the milk slowly to achieve a texture that looked like on the box.

It blew my mind when I saw a friend just dump the milk and butter and powder directly into the pot (once strained) and just fucking stir it. It came out way too watery btw, but I guess this is how most people do it?

Put the powder, recommended amount of butter and half the recommended amount of milk. Stir until you get a thick paste. Then just slowly add milk while whisking until you get the texture you want. Usually after a couple minutes it cakes up a bit and you have to add an extra teaspoon of milk in to regain the texture. Then it usually keeps the texture. I think it's because the powder takes a few minutes to absorb all the liquid. Just add the drained pasta to your mix then.
