How come I ain't never seen this cheese on here before?
Challerhocker! Flavor wise, it's like a hybrid of parmesan and blue cheese but is technically Swiss cheese. Nice and tart but still funky, sans any ammoniated flavors. Just grated some on my eggs and toast and really enjoyed it. Gonna make a sauce out of it to go with some pasta and roasted chicken later I think. That's all I have to say.

Sounds interesting. Also, "basement dweller" is a fitting name for a cheese.
Looks like a Gruyere/Bergkäs. Those don't really taste anything like blue cheese.

And coby jack is pretty good. I use it with mozzarella and Parmesan in my lasagne.
